What new taste experiences have you developed to meet consumer expectations?
As the leader in PAI in France and to meet the many demands of our customers, we wanted to develop a premium bacon. It is a product with a qualitative visual available in French or EU Origin which will be presented at CFIA 2025.
From a technical point of view, what makes this product good?
Our latest investment in an embosser allows us to work an entire piece of meat and therefore keep all its fibers without destroying the material.
For this bacon, we make a selection of 100% pork fillet meats. The fillet is brined, churned and then pushed into a casing which will allow us to have a beautiful uniform visual before being naturally smoked and steamed to give it its typical taste.
Who is this innovation intended for?
This is a ready-to-slice product intended precisely for slicing specialists. Once sliced, the bacon is ideal for platters of cold cuts, raclettes or pierrades for example.
