Le fumage des produits de charcuterie se fait aujourd\u2019hui de plusieurs mani\u00e8res.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">La m\u00e9thode traditionnelle au tuy\u00e9<\/h4>\n\n\n\n<p>Il s\u2019agit d\u2019une pi\u00e8ce a\u00e9r\u00e9e surmont\u00e9e d\u2019un conduit en forme de hotte pyramidale. Cela permet l\u2019\u00e9vacuation continue de la fum\u00e9e sur le toit par un large orifice muni de vantaux. Le fumage s\u2019effectue sans ventilation m\u00e9canique. Et dans tous les cas sans propulsion directe ou indirecte artificielle de la fum\u00e9e sur les produits. Le temps de fumage doit \u00eatre contr\u00f4l\u00e9 afin d\u2019\u00e9viter une quantit\u00e9 trop importante de HAP (Hydrocarbures Aromatiques Polycycliques) comme le Benzo(a)pyr\u00e8ne qui peut \u00eatre nocif pour la sant\u00e9 humaine.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Le fumoir conventionnel<\/h4>\n\n\n\n<p>Le fumage peut \u00e9galement se faire avec un fumoir conventionnel. Le produit est dans une enceinte ferm\u00e9e o\u00f9 seule la fum\u00e9e est pr\u00e9sente. La fum\u00e9e est g\u00e9n\u00e9r\u00e9e par friction gr\u00e2ce \u00e0 une buche qui vient frotter une roue. Ces fumoirs \u00e0 friction permettent de g\u00e9n\u00e9rer de la fum\u00e9e sans flamme permettant de rester sous la teneur maximale autoris\u00e9e de Benzo(A)pyr\u00e8ne (2\u00b5g\/kg).<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">L&rsquo;utilisation de fum\u00e9e liquide<\/h4>\n\n\n\n<p>Afin d\u2019obtenir un go\u00fbt fum\u00e9, l\u2019ajout d\u2019un ar\u00f4me de fum\u00e9e peut \u00eatre \u00e9galement envisag\u00e9. Sous forme liquide, il est directement incorpor\u00e9 dans la composition du produit et doit alors apparaitre dans la liste d\u2019ingr\u00e9dient.<\/p>\n\n\n\n<p>Enfin, le dernier process envisageable est celui de la \u00ab&nbsp;fum\u00e9e&nbsp;\u00bb liquide (immersion, aspersion ou atomisation). Par immersion, le produit est immerg\u00e9 dans l\u2019ar\u00f4me de fum\u00e9e liquide. Par aspersion, l\u2019ar\u00f4me est pulv\u00e9ris\u00e9 par gouttelettes sur le produit. Et, par atomisation, l\u2019ar\u00f4me rempli la chambre sous forme de micro-gouttelettes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Le fumage naturel chez Andr\u00e9 Bazin<\/strong><\/h2>\n\n\n\n<p>Chez Andr\u00e9 Bazin, afin de perp\u00e9tuer ce savoir-faire conforme \u00e0 notre d\u00e9marche vertueuse, nous avons choisi de fumer naturellement nos produits, avec du bois de qualit\u00e9 issu de for\u00eats g\u00e9r\u00e9es durablement dans notre r\u00e9gion. En effet nous utilisons du bois de h\u00eatre pour nos<a href=\"https:\/\/andre-bazin.fr\/pai\/modele-produit\/jambon-cuit-superieur\/\"> jambons<\/a>, nos <a href=\"https:\/\/andre-bazin.fr\/pai\/modele-produit\/tranches-de-poitrine\/\">poitrines<\/a>, nos <a href=\"https:\/\/andre-bazin.fr\/pai\/modele-produit\/lardon-cru-fumes-hp\/\">lardons<\/a> et nos<a href=\"https:\/\/andre-bazin.fr\/pai\/modele-produit\/bacon-cuit\/\"> bacons<\/a> et du bois de r\u00e9sineux pour toutes notre gamme saucisserie (<a href=\"https:\/\/andre-bazin.fr\/pai\/modele-produit\/saucisse-fumee\/\">Saucisses fum\u00e9es<\/a>, <a href=\"https:\/\/andre-bazin.fr\/pai\/modele-produit\/saudisse-de-francfort-strasbourg-knack\/\">Knacks<\/a>, Diots et Saucisses IGP).<\/p>\n\n\n\n<p>Notre m\u00e9thode de fumage est lente et contr\u00f4l\u00e9e, ce qui permet d&rsquo;obtenir une couleur ambr\u00e9e homog\u00e8ne et r\u00e9guli\u00e8re.<\/p>\n\n\n\n<p>Gr\u00e2ce \u00e0 notre m\u00e9thode de fumage naturel, vous \u00eates assur\u00e9 de proposer \u00e0 vos clients une charcuterie au go\u00fbt et \u00e0 l\u2019aspect premium tout en all\u00e9guant sur le <strong>fumage naturel<\/strong>.
