A l\u2019\u00e9tat de synth\u00e8se, c\u2019est un additif de la famille des exhausteurs de go\u00fbts, qui peut se retrouver dans beaucoup de produits alimentaires dont la charcuterie afin d\u2019accentuer les saveurs sal\u00e9es, le go\u00fbt de la viande ou de bouillon.<\/p>\n\n\n\n<p>En 2017, l\u2019EFSA (European Food Safety Authority) a men\u00e9 une \u00e9tude pour r\u00e9\u00e9valuer la s\u00e9curit\u00e9 des glutamates utilis\u00e9s comme additifs alimentaires.<\/p>\n\n\n\n<p>De ce rapport, il est conclu que cet exhausteur de go\u00fbt est sans danger pour \u00ab&nbsp;la plupart des cat\u00e9gories de la population&nbsp;\u00bb et une dose journali\u00e8re admissible (DJA) de 30 mg par kg de poids corporel est calcul\u00e9e. Pour le Docteur Claude Lampr\u00e9, membre du groupe scientifique de l\u2019EFSA et pr\u00e9sident du groupe de travail en charge de cette \u00e9tude&nbsp;:<\/p>\n\n\n\n<p><em>\u00ab&nbsp;D&rsquo;apr\u00e8s les preuves disponibles, nous estimons que la nouvelle DJA de groupe calcul\u00e9e pour l&rsquo;acide glutamique et les glutamates prot\u00e8ge ad\u00e9quatement la sant\u00e9 des consommateurs car elle est inf\u00e9rieure aux doses associ\u00e9es \u00e0 certains effets observ\u00e9s chez l&rsquo;homme, tels que maux de t\u00eate, augmentation de la tension art\u00e9rielle ou taux d&rsquo;insuline&nbsp;accrus \u00bb.<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Quels exhausteurs de go\u00fbt retrouve-t-on dans la charcuterie&nbsp;?<\/strong><\/h2>\n\n\n\n<p>Le codex alimentaire a \u00e9tabli la liste compl\u00e8te des exhausteurs de go\u00fbt, et ils sont dans la famille des additifs alimentaires \u00ab&nbsp;E&nbsp;\u00bb.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Les Glutamates de E 620 \u00e0 E 625<\/li>\n\n\n\n<li>Les Guanylates de E 626 \u00e0 E 629<\/li>\n\n\n\n<li>Les Inosinates de E 630 \u00e0 E 633<\/li>\n<\/ul>\n\n\n\n<p>Dans l\u2019industrie agroalimentaire, il y a des r\u00e8gles sur quand et comment ajouter ces additifs, et dans notre c\u0153ur de m\u00e9tier, la charcuterie, c\u2019est Le Code des Usages de la Charcuterie qui fait office de r\u00e9f\u00e9rence.<\/p>\n\n\n\n<p>L\u2019acide glutamique (E620), et ses sels (E 621 \u00e0 E 625) sont autoris\u00e9s sur certains produits&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le jambon cuit choix<\/li>\n\n\n\n<li>Le jambon cuit Standard<\/li>\n\n\n\n<li>Les knacks<\/li>\n\n\n\n<li>Les saucisses cuites<\/li>\n\n\n\n<li>Les d\u00e9coupes de morceaux de viande choix et standard<\/li>\n<\/ul>\n\n\n\n<p>Les exhausteurs de go\u00fbt sont interdits en gamme Bio, et sur d\u2019autres produits comme&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le jambon cuit sup\u00e9rieur<\/li>\n\n\n\n<li>Les lardons<\/li>\n\n\n\n<li>Le jambon cru<\/li>\n\n\n\n<li>Les morceaux de d\u00e9coupes de viande sup\u00e9rieurs<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Comment les \u00e9quipes d\u2019Andr\u00e9 Bazin ont supprim\u00e9 ces additifs de leurs produits&nbsp;?<\/strong><\/h2>\n\n\n\n<p>Chez Andr\u00e9 Bazin, apr\u00e8s nos travaux innovateurs sur le \u00ab&nbsp;Sans nitrite&nbsp;\u00bb, notre d\u00e9marche Clean Label nous a logiquement men\u00e9 \u00e0 la suppression des exhausteurs de go\u00fbt.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ainsi, nos \u00e9quipes de recherche et d\u00e9veloppement ont travaill\u00e9 pendant environ une ann\u00e9e pour totalement supprimer le glutamate monosodique (E 621) qui \u00e9tait le seul exhausteur utilis\u00e9 dans nos gammes Knacks, saucisses de Strasbourg, Saucissons cuit \u00e0 l\u2019ail, saucissons cuit au jambon, chipolatas, grillades et poitrines marin\u00e9es.<\/li>\n<\/ul>\n\n\n\n<p>Un travail technique et minutieux, en collaboration avec nos fournisseurs d\u2019\u00e9pices, qui nous a permis de remplacer cet additif par des ar\u00f4mes naturels et conserver le go\u00fbt et la saveur de nos produits.<\/p>\n\n\n\n<p>Nous sommes donc tr\u00e8s fiers d\u2019annoncer que depuis 2021, nous pouvons garantir \u00e0 nos clients que plus aucune r\u00e9f\u00e9rence Andr\u00e9 Bazin ne contient d\u2019exhausteurs de go\u00fbt.<\/p>\n\n\n\n<figure
