Ils doivent \u00eatre sal\u00e9s, peuvent \u00eatre fum\u00e9s et peuvent \u00eatre cuits ou crus, et utilis\u00e9s tels quels ou comme ingr\u00e9dient dans des pr\u00e9parations.<\/p>\n\n\n\n<p>Plusieurs crit\u00e8res sont impos\u00e9s concernant :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>la mati\u00e8re premi\u00e8re&nbsp;: poitrine de porc uniquement<\/li>\n\n\n\n<li>les traitements autoris\u00e9s&nbsp;: fumage &#8211; \u00e9tuvage \u2013 cuisson<\/li>\n\n\n\n<li>Une HPD &lt;76% et un SST&lt;2.5%<\/li>\n\n\n\n<li>la d\u00e9coupe&nbsp;: les lardons se pr\u00e9sentent sous forme de morceaux d\u00e9coup\u00e9s de petite taille<\/li>\n<\/ul>\n\n\n\n<p>La d\u00e9coupe est r\u00e9alis\u00e9e \u00e0 partir de la poitrine enti\u00e8re ce qui permet d\u2019avoir une alternance de strates de viande et de gras et donc un visuel typique de lardon.<\/p>\n\n\n\n<p><strong><u>Les lardons chez Andr\u00e9 Bazin : une large gamme pour couvrir tous vos besoins<\/u><\/strong><\/p>\n\n\n\n<p>Chez Andr\u00e9 Bazin, nous avons con\u00e7u une gamme de lardons frais ou surgel\u00e9s IQF r\u00e9pondant aux exigences des industriels du plat cuisin\u00e9 et aux professionnels de la restauration, m\u00eame pour des volumes assez r\u00e9duits.<\/p>\n\n\n\n<p>Nous disposons de nombreuses alternatives possibles dans la conception de nos produits, notamment nos 3 d\u00e9clinaisons sans nitrites ajout\u00e9s.
